Last night, I decided it was important to drive through the McDonald's drive thru to get some Shamrock Shakes

and I got absolutely adorable responses from my snaps I sent my friend Katie and my nephew Stu. So fun!

Daylight Saving Time and my favorite River Falls house. Once a week, I try to walk early and take a photo of the sunrise behind a lovely home in the shores of the Kinni. Now that DST has arrived, the sun isn’t quite rising yet as I walk past @ 7:25am. 

Also features in this photo is the snowfall we gained over the past 24 hours. It sure is pretty, but I’m looking forward to the melt. 

yummy black bean taco salad

Tonight for dinner, I made an outstanding Black Bean and corn Taco Salad...

Ingredients

• 2-3 cups chopped romaine lettuce
• 1 red bell pepper
• 1 cup black beans (drained + rinsed if canned)
• 1 cup corn (canned or steamed from fresh/frozen)
• 1/2 cup freshly diced or chopped tomatoes
• 1/4-1/3 cup sliced green onion(greens and whites)
• 1/2 cup grated cheddar cheese
• 1/4 cup crushed tortilla chips

CREAMY SALSA DRESSING

• 1/4 cup sour cream
• 2 TBSP red salsa
• 1/2 tsp ground cumin
• 1/8 tsp salt or season to taste
• 1/2 lime

First clothes line day of the season!!!! The current temp is 46 degrees Fahrenheit. This is the first day of Daylight Saving Time. 

The sunrise was 7:29am the sunset will be 7:16pm. Almost equal day and night!

I’m currently reading a fantastic book called Braiding Sweetgrass...what a cool story. It talks about Native American culture and the ways of tribal elders and the lessons they teach about plants. On my way to school today, I noticed the tell tale sign that it’s time to tap the trees. We aren’t planning on tapping this year as we have plenty of syrup from 2020, but the sign is pretty amazing.
