yummy squash soup

Last night, I made yummy squash soup and kale crisps for dinner...wow!  Here is the squash soup recipe and ingot to try my new immersion blender

INGREDIENTS

• 2 cups vegetable stock
• 4 cloves garlic, peeled and minced
• 1 carrot, peeled and roughly chopped
• 1 Granny Smith apple, cored and roughly chopped
• 1 medium (about 3–4 lbs) butternut squash, peeled, seeded and diced
• 1 white onion, peeled and roughly chopped
• 1 sprig fresh sage
• 1/2 teaspoon salt
• 1/4 teaspoon freshly-ground black pepper
• 1/8 teaspoon cayenne
• pinch of ground cinnamon and nutmeg
• 1/2 cup canned (unsweetened) coconut milk
• optional garnishes: extra coconut milk, smoked paprika, or see more ideas above

bound for warmer climates

This morning at 6am, the Andrea family came and collected Anders bound for the warmer climates of Cocoa Beach, Florida. They will be taking every precaution during this pandemic. Here's to friendly skies, friendly traffic and safe travels. 

I also asked him to send photo updates as their journey commences. 

not a fun statistic, but historical

This morning, I decided to check the current totals of Covid in our county. Total confirmed cases 3219 total deaths 30. 

I realize the typical influenza affects millions of people in the world every year, but I know a lot of people have exercised a lot of precaution and it's still this infectious. Yikes. 

I hope we don't have another virus outbreak within the next 100 years. 

survivor fever

I was a huge Survivor fan back in the day. Now I've rediscovered the magic of Survivor on Hulu & I'm having a blast. Reliving the joy of season one...the finale is when we discovered Anders was on his way. Now I'm watching season 4...the season Brad and I were in NYC during the final episode (final episode taped in Central Park). 

Binge watching a series can be so fun and I'm definitely enjoying.

My big brother Kurt learned from one of the best Dad’s and Grandpa’s I’ve ever known. Here he is on a trip to Virginia to see his sweet granddaughter Kes and grandson Beck.

After a yummy dinner of hotpot on our dining room table with Lindsey, Anders, Brad, Osten and Karen. Karen went on a 2 mile walk that was lovely and foggy. I wonder what the trees will look like tomorrow.

Last night, Katie, Osten and I dined at Mariachi Loco. It’s official. We all love deep fried ice cream.

clearing the mind

Today was a truly confusing and noisy day. To quote my sweet friend, Julie... "I shut off the noise and took myself for a walk. Wishing everyone peace and

love.

I wish we weren’t in the midst of a war. I wish we could have some peace, love and understanding. I pray that everyone can find peace, love & understanding. 

dinner and some cribbage

I’ve been hanging out all evening at our new indoor table. Dinner of quail eggs, bear sausage and homemade bread, then cribbage with Anders and lastly school work. 

Now my bed is calling and so will soon surrender. 

a little rearranging

Tonight after a good first day back to school after winter break, we did a flip of the Christmas tree, some of the Christmas village and our little love seat. We brought in the beautiful dining room table that we have on the porch for spring/summer/fall dining and also had our Thanksgiving and Christmas meals on the table. It’s so nice to use this table indoors and I’m eager to put it to use once we get the benches he made inside. 

I have a little candy cane hot cocoa on the table and am enjoying right now.
