pear cobbler

A few years ago, my cousin Melinda brought pears to the Pierson reunion. I brought a quart back and it’s been sitting in our kitchen since. Today is the day I took action and am baking a pear cobbler.

Here’s the recipe found online:

Filling:

3/4 cup brown sugar   3Tblsp flour, 2 Tbsp lemon juice, 1/8 tsp salt, 1/2 tsp cinnamon

2 29 ounce cans pears drained

Topping:

1 cup flour, 3 tablespoons melted butter, 2 tablespoons sugar, 1/2 cup buttermilk, 1 tsp baking powder, 1/2 tsp baking soda

Preheat oven to 375. Butter an 8x8 baking dish. Put pears in bottom of dish.

Filling: put ingredients in a saucepan and heat until melted. Pour over pears.

Mix the topping ingredients until combined. Drop by spoonful on top of filling. Bake 30-35 minutes
